Wiring questions - whole house remodel

I'm sorry if this has been covered already somewhere and I missed it. I would have looked longer, but my contractor is a couple of days away from drywalling everything up, and I think my electrician doesn't know as much as he says he does.
Right now, we're down to studs, and he has run the following wires:
RG6 from the satellite dish and cable box into the central closet
RG6 from the central closet to each HDTV around the house (8 or 9)
RG6 from the media room (the only Blu-Ray player) to the central closet where I hope to someday have a Matrix Switcher
Cat 5 from the central closet to each HDTV around the house for streaming, firmware updates, etc.
Questions/Concerns:
1. He assures me the RG6 is what he uses for his HDTVs, but do I need particular HDTVs to get 1080p out of an RG6?
2. I've never heard of using RG6 as the output from a Blu-Ray player. I don't even know if I will ever actually want to play my Blu-Ray around the house, but I figured I should wire it while I could.
3. I would really prefer NOT to have a cable box or satellite receiver under/next to every TV, but I have no idea how to change the channel if I don't have a box at which to point the remote. I would also prefer not renting 8 or 9 boxes, which is where the Matrix Switcher comes in.
4. Assuming we get this all to work the way we want it to, are there other devices besides the Blu-Ray that I should consider pumping out to all the other TVs? If so, what cables should I use for it/those?
5. The audio is all going to be separate from the TVs, but I don't know what sources we will use. They are all fed from the media room and will have volume controls in the walls of the rooms, at least to start.
The irony in all of this is that my wife and I watch about 2 hours of TV a month, but maybe we'll watch more if we have it in the kitchen and master bathroom and the patio...
Anyway, I'm sorry (again) for the newbie (and possible redundant) questions, but I appreciate your advice and suggestions for the 4 Qs/Cs.
